Unfortunately the heat used the canning process destroys much of the nutritional value and shelf life is limited. Freezing is fine until you experience a power outage of freezer failure. Plus you have the problem of freezer burn to contend with. Dehyrating has a limited shelf life.
The absolute best method of preserving food is freeze drying.
The procedure is simple, foods are frozen to -40 degrees then place in a vacuum. Then the food is warmed allowing the ice to change directly from solid to vapor without passing through a liquid phase and vacuumed off.
The food can then be placed in the storage containers.
Oxygen assists in the deterioration of food therefore it must be removed by vacuum, oxygen absorbers or even a chunk of dry ice to displace the oxygen. It is recommended that food is stored in mylar bags with oxygen absorbers. But you can also use a vacuum sealer.
While allowing you to preserve foods you love you also know what is really in it. Most of the nutritional is kept intact along with flavor and appearance. Plus being without water the weight is minimal so if you are hiking or camping you will appreciate carrying it.
